Fructan

Structural description

Some plants store carbohydrates in the form of inulin as an alternative, or in addition, to starch. Inulins are composed of β(2-1) linked fructose units having a typical terminal glucose. Native inulin encompasses a family of linear structures varying in degree of polymerization (DP) from 3 to 60 (average DP=10). Oligofructose is obtained by partial hydrolysis of inulin and has a small DP ranging from 2 to 8 (average DP=4). Oligofructose nomenclature is given by the formula GFn (Glucose and Fructose number).

Activities and Uses

This polymer is a recognised source for the production of either ultra-high fructose or oligofructose syrups. Hence, Fructan are widely used in Agrofood industry. Inulin and oligofructose are used to replace fat or sugar and reduce the calories of foods like ice cream, dairy products, confections and baked goods

Oligofructose (FOs) is a prebiotic, and its positive effect on human health has been widely acknowledged (e.g. osteoporosis). Oligofructose has approximately 30 to 50 percent of the sweetness of table sugar. Inulin is less soluble than oligofructose and has a smooth creamy texture that provides a fat-like mouthfeel.
