Pustulan

Structural description

Pustulan was first isolated from Lichen Lasallia pustulata and is a linear Glucan having β(1-6) linkage. Pustulan contains up to 2% of O-Acetyl groups (1 acetyl group every 10/12 glucose units). This polysaccharide is distributed in lichen group of Umbilicariaceae.

Activities and Uses

Gentiooligosaccharides are useful as a taste improver for certain beverages. Gentiooligosaccharides (D.P. 2–3) have also been noted as prebiotic substances showing bifidogenetic activity. Such characteristics suggest the further potential of these gentiooligosaccharides in food and biology.
